Cucumber Sandwiches

A staple at High Tea and a go-to for a quick and delicious snack. These are a great addition to Tea Time and enjoyable with an array of tea flavors. It looks beautiful with the cucumber skin on or off. The diagonal layout of the cucumbers are fancy for the eyes and gives the sandwich an elegant texture.

Cucumber Sandwiches


  • 1 cup Cream Cheese, softened
  • 1/4 cup Butter, softened
  • 1/4 cup Chives, finely chopped
  • 1 TBSP chopped Dill
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Lemon, zested
  • 2 English Cucumbers
  • 12 slices of Bread


  1. Whisk together the butter and cream cheese.
  2. Add zest, herbs, salt and pepper and combine well.
  3. Using a mandolin, thinly slice the cucumbers length-wise.
  4. Spread the cream cheese mixture moderately on the bread on one side.
  5. Layer the cucumber slices diagonally over the buttered bread.
  6. Cut off excess with the crust.
  7. Cut the open-faced sandwiches in half to make delicate finger bites.
