Lemon Curd

My family loves tea time and what better way to have it than with some homemade Lemon Curd? If your not a fan of lemons you and substitute the lemon for any citrus fruit to make an interesting twist on this traditional recipe. I love making this for tea time, snacks, and breakfast.

Lemon Curd


  • 4 Eggs
  • 1 1/2 cup Sugar
  • 1 tsp Salt
  • 3 Lemons
  • 1/4 cup Butter


  1. Mix the eggs, sugar, and salt with a whisk in a saucepan.
  2. Zest the lemons into the egg mixture.
  3. Squeeze the lemons through a mesh strainer to catch the seeds and pulp and into the egg mixture.
  4. The mixture will separate. Just stir the mixture until homogenized.
  5. Cook over medium heat, stirring constantly until the mixture becomes thick, about 8 minutes.
  6. Turn off heat and add butter until thoroughly combined.
  7. Store in the fridge for up to one week and serve cold.
